MOIST RED VELVET CAKE, WITH VANILLA FROSTING and colored sugar, vegan recipe

MIX DRY INGREDIENTS TOGETHER IN A BOWL:
1 ½ cups flour (whole wheat or white)
1 cup sugar
1 tablespoon cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt

MIX wet ingredients together, (or dump into bowl):
1 cup water
1 Tablespoon vinegar
1 teaspoon vanilla
4 Tablespoons cooking oil (1/4 cup)
2 Tablespoons red food coloring

Pour over dry ingredients, mix together till fluffy, (approx. 45 seconds)

Pour into a greased 7 inch pan, bake at 350 degrees Farenheit for approx 25 minutes, or until a toothpick comes out clean. Cool, and frost with Vanilla Frosting

VANILLA FROSTING: (See my Carrot Cake for a LEMON-LIME FROSTING)
1 cup icing sugar
½ cup margarine or coconut oil
1 teaspoon vanilla
Mix with a fork until well combined.
Add 1 Tablespoon water, and beat with a spoon, pushing against the side of the bowl to eliminate any lumps, until light and fluffy, (approx. 1 minute). Add up to ½ cup more of icing sugar if needed to keep the mixture thick and fluffy without separating.

CALORIE COUNT:
1/8th of cake with frosting: 382 calories
Cake: 1850 calories total, (divided into 8 pieces: 232 calories per piece)
Frosting: total calories with reduced calorie margarine1200 calories.
(divided into 8: 150 calories)
